I've had some experience with knives, and (to my shame) have been in fights where they've been used. a lot of these fancy trapping moves are a really good way to get your ass sliced up. Maybe they'd work. Any of you can be my guest to try them out, and get back to us.

My knife defence has always worked for me. If you are arguing with someone, and they stick their hand in their pocket, assume the worst and lay them out.

Agreed.
My sensei always came up with strange defense moves that really worked well in gaining control of the hand the knife was in, but they always too far too long.

Time=more chances to get sliced up.

The best way I have found are.

They come in from over the head, cross your hands, block and grab that way. No sense in trying to use one hand.

Sides, use your fore-arm. Yes, you might hit your bone, but a bruise is better than getting gutted.

Undercut, same as overhead, cross your hands, block that way. It gives freedom of the wrists.

Point being is, get control of that knife.
