Dude, if anything the combination of new and old preservatives will make you live longer (or, okay, make your body decomposition take far longer--we could do a 'Weekend and Bernies' thing with your body though :mrgreen: )

This looks interesting so it seems that you don't pack the jars very tight and what's the longest/oldest jar you've tried? you think there is such a thing as being keep in the brine as to long?

Never pickled hot dogs but we have pickled just about everything else with slight variations of that same brine. We probably do kielbasa and smoked sausage the most but we also do eggs, Deer hearts & tongues.

Just some advice...

Pickled foods reach their full flavor about 6 weeks after they have been processed. Sometimes longer. Wait at least 6 weeks, 12 is better, before opening any of those home-canned pickles.

Also...

Products like pickles, chutney and other sauces have been preserved with acid such as vinegar and will therefore usually keep for a very long time (two years) in the refrigerator.

This is just my experience from canning and pickling. Do your own due dilligence. If you get sick or die, don't come whining to me. The Ball canning books ("Ball Complete Book of Home Preserving" and "Ball Blue Book Guide to Preserving"), the USDA's book "Complete Guide to Home Canning and Preserving", and the The National Center for Home Food Preservation website are good places to start.

There's a company that sells pickled sausages http://www.longlakefoods.com/customer_testimonials.aspx that states their sausages are good for six months without refridgeration. I'm guessing the hot dogs are probably about the same.

I've pickled my own eggs and dogs for years. Personally, I prefer the all beef dogs at Sam's club in the 10 pound box (frozen dept). I've always tried to keep a gallon jar from like, mayonnaise, in the back of the fridge. Into that, I pour the pickle juice from finished jars of pickles, since we always buy the same kind. When it's 5/8- 3/4 full, I start hard boiling eggs, drop them in after peeling, and forget about them for a month or more. The refrigeration isn't NEEDED, I just prefer them cold, and this does the job.

You may have noticed I haven't mentioned anyone else in the family in this description. That's because I save these for days I just want to be alone. Works every time! Even the DOG won't hang with you.

The recipe looks great. I must try this.

As far as storage life, if they are pressure canned like any other meat, they will keep longer than zombies. Between the acid and salt and sterilizing temps of the canner, it will be good longer than needed.

I went to the supermarket thinking about trying to make these. I looked on a shelve there and it was $10.99 for a qaurt of pickled eggs and $11.99 for a qaurt of pickled sausages. Hmmmmm.

$1.99 for a gallon of vinegar, $1.29 for a dozen eggs, and $.88 for a pound of Bar S hotdogs. I already had 2 1 quart canning jars laying around. Around $5.00 invested.

The only thing I changed from your recipe was to add a few drops of red food coloring(looks orange in the pic), and a little yellow(daughter wanted to to add blue instead) food coloring in the eggs.

This reminds me of a talk we were having here at work last week. A couple of my coworkers had a guy at the fire department they volunteer at that did pickled bologna. They said it was awesome, and that is from one guy that was so picky I couldnt get him to try corn beef and pastrami...

Anyway, this got me thinking about that. I needed a recipe for the brine, and the original poster took care of that for me. I've never pickled meats or eggs myself, I just eat them already done.

I'm wondering about what trifecta of awesome could be made into a pickled meal in these jars:

hot dogs, eggs, and...

broccoli spears
tomatoes
brussel sprouts
beets


I've come across this thread before, but am not sure about putting different foods in the same pickling jar...

I like beets, but worry about them coloring everything purple. I like brussel sprouts, but worry that my wife might ban me from our home. I like tomatoes and broccoli, but am not sure how well they pickle.
