Just speaking for myself: the wife and I like to be very picky about our food when possible - whole grains, organic, non-GMO, no added sugar or preservatives or trans fats, BPA, PCBs, you name it. This often is the exact opposite of typical foods that preppers buy in bulk. Probably because the foods we prefer tend to have a pretty short shelf life. Now when the SHTF I'm certainly not gong to turn my nose up at some canned tuna just because I'm concerned about the lining of the can, but I'm a firm believer in stock what you eat, eat what you stock, FIFO - so I'm not going to buy a bunch of Mountain House meals or white rice or non-organic wheat. (Ultimately our goal is to grow almost all our own food and put it in jars with BPA-free lids.)
You may find that you can acquire a niche market of "picky preppers" if you can track down some good sources of these sort of foods or relevant accessories. I don't know how may other potential customers out there are like me and my wife in this regard.
EDIT: You may be able to cross-advertise on Paleo/Primal websites and also market your wares to diabetics?
