What is the best food to stock up on? I am sure that even canned foods will expire within a few years. Is there anything that will last longer?

if you have enough food stored for 1 year, canned foods will be fine. Remember to cycle through them so they are all "fresh" when "it" happens.

Beyond that, work on your skills at renewable sources of food. That means gardening/farming (depending on your location) and hunter/gatherer skills for long term/total collapse situations. This also means you MUST be able to collect and prepare seeds and store the crops for use all year, typically drying/canning.

Many dried or dry foods will store a lot longer than a year, if you are only looking for just pre-prepared items. If kept cool, dark, dry and pest free; sugar, flour, rice and beans should store for extended periods, among other things

Store what you normally eat. During stressful times, most folks will turn down food if it is something they are not familiar with.

Add some "comfort foods" if you can. Nothing like sitting down to a nice hot meal of (your favorite) when times are hard, utilities been out for a week, etc, etc.

You can pick up some kind of long shelf life stuff, just make sure you start eating it NOW.

Good luck

One point -
Most people are more adventurous regarding food than drink, so keep that in mind.

It is a good idea to store what you normally eat and stack it deep, but I am also a fan of the stock what you DON'T eat ideology as well, at least a small amount. Canned Ham and Sardines have best-by dates of 4-5 years in many cases. I am not one of those adventurous types when it comes to food and I don't normally eat them so I won't be tempted to unless I was a dumb ass and ate through all the rest of my stores.

I go 50/50 on canned food and dehydrated/freeze dried stuff.

Here's a couple good articles about canned food staying good for decades, in one case, for 100 years:
