Me and a buddy decided to make a MAN'S dinner the other night.
Huge and cheap...two full racks for $30
We rubbed them down with cajun seasoning, salt and pepper, paprika, and a little tarragon.
Then, boiled them in water with a mixture of the same but with beer and garlic.
Here is a picture of the ribs after boiling but before grilling.
This is the boiling liquid after slight reduction.
We used the liquid to steam some potatoes, before making a MANLY potato salad (well not really, it had balsamic vinegar..)
Here's the sauce coming back up to temperature. We used a couple of bottles of store-bought sauce kicked it up a notch with half a jar of guava jelly (...rub it on my belly...), and some of Ken's special Hawaiian chili-pepper water.
Some fine tuning: *(thats the chili water)
And some cooked Ribs (I really need to get a bigger grill. We had to chunk 'em just to fit on my little Hibachi)
Ken put sauce on the first batch...mistake. The sugar in the sauce turns to char... Still good, just not competition worthy

Sorry, I should have taken some fancy plating pics, some while they were on the grill, and one of the potato salad. Alas, there was copious amounts of alcohol involved and I wanted to eat them, not take them to the prom.
They were so good that I'll definitely make them again. I can always do a step-by-step next time.
