I've had some experience with knives, and (to my shame) have been in fights where they've been used. a lot of these fancy trapping moves are a really good way to get your ass sliced up. Maybe they'd work. Any of you can be my guest to try them out, and get back to us.
My knife defence has always worked for me. If you are arguing with someone, and they stick their hand in their pocket, assume the worst and lay them out.
