seriously, did Ford miss the "post" in post-apocalypse?

Not sure, is Fury Road a reboot or something? It could be that since we are in the present far past the time when the Pocky-Clypse was supposed to have happened, they're pushing the timeline into the future, so the old "V8 Interceptor" Max used as a cop, and modified as the road warrior, needed to be made more futuristic as well. I can imagine some kind of opening scene where it's slick, clean, and in police colors, and then in the movie itself it's all tore up and customized.
